Laura’s Hot Fudge

OK, so I’m not allowed to share the real deal.  Her family has a tight lid on this hot fudge recipe, but you guys…I spent a looooong time trying to imitate it and I have to say it’s pretty darn close. I despise when recipes have a long description and you have to search for the ingredients, so I’m leading with that:

1 and 1/8 c. Heavy Cream
3/4 c. Light Corn Syrup (Karo)
2/3 c. white sugar
1/2 c. Hershey’s Unsweetened Cocoa Powder

4 squares (~2 oz.) of your favorite dark chocolate – I use Trader Joe’s 72% cocoa
1/2 tsp. salt
2 Tbs, salted butter
1 tsp. pure vanilla extract1. Dump the first four, bold, non-italicized ingredients ( heavy cream, light corn syrup, white sugar and Hershey’s powder – sorry, this is how my brain works) into a medium saucepan and put on some medium heat. Let it bubble up and stir frequently.  Just don’t leave it. Do this for about 6 minutes or until everything starts thickening up a bit and isn’t grainy.

2. Dump the next four, italicized ingredients in (chocolate squares, salt, butter and vanilla extract) and let it boil about 5 minutes longer.  It will bubble up, thicken and finally look like a glossy, thick sauce that coats your spoon.

The whole process takes less than 15 minutes and yields over 2 cups, I’d make it just before you serve it over the cheapest vanilla ice cream you can find (Walmart is Laura’s favorite).

Now for the story:

We originally had her hot fudge when we stayed at her new house in Florida. It was the first night and I couldn’t believe how amazing it was.  We had it every night we were there.  It’s that good.  She often has just the fudge with some peanuts sprinkled in.

When I asked for the recipe she was hesitant and called her Mom. I was given the bad news that I couldn’t have the recipe (for sharing). She said she’d give it to me if I didn’t share but I just didn’t trust myself.  

Before she left she gave me a frozen jar of it so I had something to taste test against!  Muahahahha.

I hit the kitchen like a mad scientist and viola!
